Keeping the Winter chills away!

It is an amazingly beautiful day here at the Pot Kiln with the fields around us covered in the morning frost. The fires have all been lit and the sun is taking away the chill in the air. Just perfect!
With Christmas creeping closer the menu has taken on the delights of December and our more comforting dishes have reappeared. Today’s menu includes a slow braised featherblade of Hereford beef (so soft it just melts in the mouth) and a roasted pork belly with black pudding. It’s so comforting to be able to eat this hearty food and just relax ( I think we all need a little more relaxation at this point in the year!).
It is not just the food that is here to keep the ‘cockles’ warm but also the bar. We have dusted off the bottles that are so rarely used in the Summer and have some great drinks lined up. Cosy into the fire and have a sloe gin & tonic or a whisky mac….my idea of heaven.

A couple of new delights on the wine list

Everything is a little manic around here in the preparation for the festive period and it has been a perfect time to play a little more with the wine list.
As Autumn gets underway all of the lighter wines that were so popular during the Summer months like the Pinot Noirs and Gamays give way to the heavier winter warmers. In order to keep up with these changes i have introduced some wines from the New World. A new Argentinian Malbec Cabernet Sauvignon (a wonderfully balanced mixture of grapes with black fruit flavours) and a Shiraz from Thelema in South Africa (a perfect food match for our Fallow deer dishes from a first class vineyard!).
I have also decided to replace our house Chardonnay from Bellefontaine in France with a Chilean Sauvignon Blanc which is drinking beautifully at the moment. The quality of the New World wine being produced at the moment is so good I am sure more will follow.

Countrywise Kitchen

The new series got off to a good start. The viewing figures for the first episode were around 3.5 million!!!
Mondays episode showed views of the Pot Kiln and the wood oven with Mike cooking some stunning pork spareribs.

The Pot Kiln Garden in July

As much as we can, we love to use our garden ingredients to supplement our menu and this is a wonderful time of the year to do that. All of the vegetables are growing well and with the help of Kevin, our gardener, we have some wonderful produce for you.
Growing well at the moment are broad beans and peas, baby carrots and spinach and we find ourselves surrounded with an abundance of lettuce and mint. Peas and broad beans make a wonderful soup for our menu and the garden spinach is being put with Wigmore cheese (from Risely, Berkshire) to make a fresh summer tart. Also, most of our vegetables, when we have enough, are offered as side dishes to accompany your meals.
We are also eagerly awaiting the arrival of purple carrots and garlic both of which we are hoping to see over the next month or so. Also, we are experimenting at the moment with growing micro cress propagated from seed but I will let you know how we get on with that.

Out of the kitchen and into the field

Mike took all of the chefs out on to Wasing estate on Tuesday to get up close and personal with their ingredients.
It was a beautiful evening and for Marc and Tom (our sous and pastry chef) it was their first time out stalking. Filled with anticipation and excitement at seeing exactly where their ingredients are coming from they set out without really knowing what to expect….
At the moment it is closed season for a lot of deer (apart from Roe Bucks) which means that we are getting quite light on available deer. Luckily however after a couple of hours stalking the boys managed to set their sights on two suitable candidates and amazingly, for their first time, brought them home to us.
After that it was a trip to Vicars Game to meet with Alan Hayward (the owner) to show the chefs exactly what happens to the meat after the stalk. All in all a good day learning….and wonderful for the menu!

Comments cards

Comments cards have recently been introduced at the Pot Kiln and we are always eager to hear feedback from our customers.
Starting with our head chef Jonathan Taylor (Dorchester trained and amongst other places spent five years at Highclere Castle), we now have a completely new kitchen team so at this point your commentary is much appreciated.
Away from the kitchen we also want to hear how you feel about the wine list and the overall service here.
Even though we have only been using the cards for ten days, little changes have already been made. At the moment I am working on our wine list (will be available on the website soon) and have added two Burgundys (a Pinot Noir and Clos du Roi), I’m debating a new Malbec and deciding if it wouldn’t be a bad idea to add an ice wine from Canada to our dessert wines.
All in all it means a lot of wine tasting but happy to do it and if anyone does have any suggestions for wines do email me. I am always curious for new discoveries!

Deer needed!

After a crazily busy weekend, the Pot Kiln is almost out of venison. This is entirely due to my normal deerstalking activities being interrupted by the filming of Countrywise and it’s sister series, Countrywise Kitchen. These are nearly finished and so is the accompanying book, to be published in the Autumn.For me it is back to normal, so Trevor Hughes and I are going out to leafy Hampshire after the elusive Roe bucks. Expect to see fresh liver on the menu on monday!Mike

This is where we shall endeavor to report on anything and everything occurring at The Pot Kiln.
Jonathan Taylor, our Head Chef, will be keeping up-to-date with any food related issues, seasonal produce, what’s growing in the Pot Kiln vegetable garden, new menu ideas, etc.
Our Front of House Manager, Rebecca, will be writing about any events coming up such as taster evenings, food and wine evenings, new wines on the list, special offers etc.
Mike might even make the odd appearance here with some news in between all his various filming, writing, deer stalking, and teaching activities.
